HUMMUS THREE WAYS

1 can chickpeas

1/4 cup fresh lemon juice (2 lemons juiced)

1/4 cup tahini

1 small garlic clove

2 tablespoons olive oil

1/2 teaspoon cumin salt & pepper

2-3 tablespoons water (I used 2)

GREEN:

1/3 cup frozen peas (steamed to defrost)

1/3 cup fresh cilantro

PINK:

1 beet root (pre cooked)

Directions:
1. Add tahini and lemon juice to your food processor and process for 1 minute. Scrape the sides and continue for 30 more seconds.

2. Add the olive oil, garlic, cumin and salt to the food processor and process. Add 1/2 of the drained chickpeas and process for 1 minute.

3. For the “REGULAR”: Add the second half of the chickpeas and process 1 minute.

3. For GREEN: Add the peas and cilantro and the second half of the chickpeas and process 1 minute.

3. For PINK: Add the beet root and the second half of the chickpeas and process 1 minute.

4. You may add some water because most likely the hummus will be too thick.

5. Enjoy with raw veggies!!!
