Grilled Cheese with Caramelized Onions.

Recipe:

For 2 grilled cheese sandwiches you need:
4 slices of sourdough or bread of choice
Your favorite vegan cheese slices *(see below for my favorites)
Vegan mayonnaise or vegan butter

Caramelized onions
1 large sweet onion
1 tbsp vegan butter (or olive/avocado oil)
1 cup apple cider
Pinch of salt (if you’re not using salted butter)

Peel and finely slice onion.
Sauté with vegan butter on low to medium heat for 5 minutes until translucent. Add 1/2 a cup of apple cider, only stirring occasionally, and cook for 5 minutes. Add the second half of apple cider, then let onions sauté until they are are golden, caramelized and delicious for at least another 5 minutes.
Caramelized onions take a bit of time (20-25 minutes) but they are worth it! Don’t stir them around too much, and use low heat to avoid burning.

Spread sourdough pieces on one side with vegan mayo or butter, lay one slice (buttered side down) onto your heated pan or grill pan, layer it with cheese, onions, another piece of cheese and the second piece of sourdough (buttered side up) and grill from both sides until bread is golden brown and cheese has melted.
